A recipe I developed this Christmas. You can serve this with maple syrup or a caramel sauce, but I like it as-is. This is easy to make ahead and heat up for service.
Peel sweet potatoes and cut into 1 inch cubes. Microwave cubed potatoes for 7–10 minutes until fork tender. Let potatoes sit for 10–15 minutes to allow steam to evaporate. In a large skillet or frying pan melt 3 tbsp butter with 3 tbsp brown sugar. Add potatoes to the pan along with the ground spices and cook on high until potatoes are glazed and slightly browned.
