- 1 Flat Iron Steak or Skirt Steak
- 1 large red onion , sliced
- 2 bell peppers , sliced
- 3 tbsp. chile powder
- 2 tsp. dried oregano
- 2 tsb ground cumin
- 8 garlic cloves , minced
- 3 tbsp. red wine vinegar
- 1 cups lime juice
- 2 tsp. salt
Combine all ingredients and mix.
Cover streak with ½ of the marinade and let rest for 1 hour. Grill steak over high heat until desired doneness.
Slice peppers and onions, grill over high heat until softened and onions are slightly caramelized. Thicken remaining marinade with a flour slurry and toss with vegetables.
Serve with corn tortillas, guacamole and salsa
